From The Ashes
Chef Moreno Benigno once ran a restaurant on this same island. In December 2021, Typhoon Odette tore it apart — he was renting the space, not owning it, so there was nothing left to rebuild on.
Rather than walk away, he rebuilt quietly — consulting for hotels, teaching at a local culinary school, saving everything toward one new brick oven. What began as take-out only grew into a 10-seat reservation room, then the 30-chair restaurant it is today.
"Charcoal is what remains after everything burns."
That belief became the kitchen's signature: activated charcoal folded into every pizza dough — for health, for taste, for the look. Dark crust. Bold heart. This is Moreno's.
